
I took a nice long break from social media through the holidays, starting with Thanksgiving. It was soooo nice – sort of back to my roots, me time. I spent time with family and friends, created, painted, worked in the yard, decorated for Christmas, yoga/Pilates, etc… I felt very mindful, aware, in the moment, living, more on that in another post… But it got me thinking about our Summer garden, and I always get excited in January for what to plant come Spring. I can’t wait! Anyway, I was adding arugula and chopped tomato and cucumber, all things Summer garden, to one of my favorite foods to eat in the world, and I thought, I should share this. It’s similar to a lox bagel and/or avocado toast, but with a twist, or a crunch actually. And I like that I can add a lot of homegrown veggies to it. (BTW, not a foodie. I burn toast).
So I had the, above, most amazing avocado, lox, capers, tomato, etc… toast last year at a lovely hotel I was staying at for an anniversary weekend. It’s a fave and it was insanely good, but it was huge and very filling – too much bread. Now, my other food obsession is tostadas. This comes from our honeymoon in Mexico where I ate all types of different tostadas for literally every meal, including breakfast, every day, for a week. They were so good!
The point, I decided to combine my two food obsessions and lighten it up, and created an avocado and lox tostada! You get a great crunch for a lot less carbs, 7 per tostada, and calories than a bagel or toast. The result – absolute best eats ever! So, if you are wanting to cut down on bread, calories, gluten, insert a little tostada, get creative and pile high. Here’s my super simple recipe for my avocado and lox tostada – and I don’t worry about burning any toast. Enjoy!
Avocado Lox Crunch: Corn tostadas; Avocados mashed with salt and pepper, or smear on your favorite homemade or store bought guacamole; Lox or Nova; add toppings- tomato, white onion, arugula, capers.
